@Badapplefromthefuture: My understanding is there are really two issues at play here.
The first is the display of the birth name in the Plantilla:Ficha de persona [Template:Infobox person] at Sophie (artista). There should be a way of overriding this. At w:en:Template:Infobox person/Wikidata#General example there is the suppressfields field for which on can list Wikidata fields that one wants suppressed. Spanish is not my native language, so I was not able to locate the corresponding parameter at w:es:Plantilla:Ficha de persona or w:es:Módulo:Ficha de persona. Perhaps you could ask the developers of that template or module on the corresponding talk pages how to do this, or to add the functionality if it does not exist. There is also a workaround. You can add | nombre de nacimiento = &​nbsp;, which would display the Nombre de nacimiento with no value, although I suppose you could use some other value.
The second issue is that you wish to censor Sophie's birth name across all Wikipedia projects & will label any inclusion of Sophie's birth name as transphobia, essentially labelling any editor advocating the inclusion of the birth name as one who has hatred or fear of transgender and transsexual people (from Wiktionary definition). I find this deeply troubling. I an radically against censorship, although there are times that self-censorship is appropriate, such as that outlined at w:en:MOS:DEADNAME for the enwiki guideline. However, Sophie has been dead for over 2½ years & the birth name was well known when that individual adopted the stage name (please see https://www.theguardian.com/music/2016/jan/24/sophie-live-review-village-underground-bipp-msmsmsm). I do not even believe in the right to be forgotten for notable people, & while I respect the living's desire to be identified as they wish, I do not extend that to the dead. Indeed, if we omitted pertinent details for many of the articles for historical transgender people in enwiki, there would be no mention of the very things that made the individual notable in the first place, & hence no reason for the article. I reject that. These people were important, & their history needs to be known, not suppressed.

It's not a stage name, its HER name. And her LEGAL name. So basically you're just clinging on transphobia. Whether you like it or not, it's her name that's important, and more so if she's passed, just basic common respect. If she were cis this wouldn't happen. Check yourself. This is absolutely a good and valid reason, it's literally a fact. You should not policy what it is or not anyways. People still denying this is vandalism on her person. Whether you like it or not. Do we even have a proper source for the name currently used as birth name (P1477)? The referenced source introduces the name with whose real name is, that’s not necessarily the birth name.
